| Oven Fried Fish
1/4 cup of cornmeal 1/4 cup of fine dry breadcrumbs 1/2 teaspoon of salt 1/2 teaspoon of paprika 1/4 teaspoon of dillweed 1/8 teaspoon of pepper 1 pound of fish fillets, cut into 1 inch strips 1/3 cup of milk 3 tablespoons of butter or margarine, melted Garnishes; lemon halves, tied in cheesecloth, flat leaf parsley sprigs
Combine first 6 ingredients in a shallow dish. Dip fillets in milk, and dredge in cornmeal mixture. Place in a lightly greased 13x9x2 inch pan and drizzle with butter. Bake fillets at 450ºF. for 10 minutes or until fish flakes easily when tested with a fork. Garnish, if desired. Yield: 4 to 6 servings
Note: for fish fillets, we used grouper and orange roughly.
