| Rolled Flounder
four 5 1/2 ounce of flounder fillets 1 tablespoon of butter or margarine, melted 1 tablespoon of grated lemon rind 1 teaspoon of onion powder 1/2 teaspoon of salt 1/4 teaspoon of pepper 1/4 teaspoon of dried whole marjoram 1/2 cup of shredded carrot 1/2 cup of chopped fresh mushrooms Lemon wedges
Brush one side of each fillet with butter; sprinkle with lemon rind, onion powder, salt, pepper and marjoram. Spoon 2 tablespoons of carrot and 2 tablespoons of mushrooms over each fillet. Roll up fillers jellyroll fashion. Place fillets seam side down in a greased 9 inch pan. Top with buttered breadcrumbs. Bake at 350ºF. for 20 minutes or until fish flakes easily when tested with a fork. Transfer rolls to a serving platter; garnish with lemon. 4 servings
