Snapper with Olive Spread

Olive Spread
8 tablespoons (1 stick) of butter
2 tablespoons of chopped fresh parsley
4 teaspoons of fresh lemon juice
1/4 cup of coarsely chopped green olives with pimiento

Fish
Oil for lubricating fish and greasing grill
2 pounds of fresh red snapper fillets, cut into 4 inch long pieces

Make olive spread: Place butter in a small saucepan and melt over low heat. Stir in parsley, lemon juice and olives. Mix well and transfer to serving bowl.
Grill snapper: Oil snapper fillet pieces on both sides, then place on oiled grill. Cook for 3 - 4 minutes on each side or until fish just begins to flake with fork. Remove from heat immediately.
Divide fish pieces evenly among 4 heated dinner plates. Spoon small amount of olive spread over each serving. Serve immediately. 4 servings
