| Sole with Tarragon
four 7 ounce sole, flounder or gray sole fillets Oil for greasing fish basket melted butter white pepper Crumbled, dried tarragon Carrot curls for garnish cherry tomatoes for garnish 1/2 pound of green grapes for garnish
Arrange sole fillets on a prepared double hinged grill basket or on a sheet of aluminum foil with some air holes. Brush with melted butter. Sprinkle fish with white pepper and tarragon. Sprinkle 2 tablespoons of tarragon directly on hot coals. Place fish onb prepared grill and cook about 4 minutes, until it begins to flake when tested with a fork. Brush with butter during grilling. Place fish on individual dishes and garnish with carrot curls, cherry tomatoes, and small clusters of green grapes. Yield 4 servings |
