| | South Georgia Catfish & Swamp Gravy
3 pounds of catfish steaks or fillets 1 1/2 teaspoons of salt 1 cup of cornmeal
Sprinkle the catfish with salt and coat with cornmeal. fry in deep, hot fat until brown, them drain on absorbent paper.
Swamp Gravy
1 tablespoon of cornmeal 3 cups of diced potatoes 1 cup of diced onion one 20 ounce can of tomatoes 1 can of tomato juice 1 teaspoon of salt 1 teaspoon of pepper
Pour 1/2 cup fat into a saucepan. Add the cornmeal, potatoes and onion and cook until tender. Add remaining ingredients and cook, stirring frequently, until thickened. Serve with catfish. |
