| Stir-Fried Tuna
2 cans (6 1/2-ounces each) of water-packed tuna 3 tablespoons of salad oil 1 red or green pepper, seeded and cut into 1/2-inch cubes 8 green onions, cut into 1/2-inch slices 1 clove of garlic, minced 1 cup of celery, sliced 1/2-inch diagonally 2 cups of snow peas 1 (8-ounce) can of water chestnuts, drained and sliced
seasoning sauce: mix together the following: 1 tablespoon of salad oil 1 tablespoon of cornstarch 3 tablespoons of soy sauce 3 tablespoons of water 3 tablespoons of sugar 1 tablespoon of white vinegar 1/4 teaspoon of ground ginger
Drain tuna. Break into chunks; set aside. Heat oil in wide frying pan. Add peppers, onions, and garlic. Stir-fry for 15 seconds. Add celery, snow peas, and water chestnuts. Stir-fry for 1 minute or until vegetables are brightly colored. Stir in seasoning sauce mixture. Cook over high heat, tossing and stirring until sauce is slightly thickened. Add tuna, mixing well. Serve over hot rice. Serves 4.
