Whiting Casserole

Whiting Casserole

4 pounds of whiting
1 small onion, sliced thin
1/2 pound  of mushrooms, sliced thin
1/2 teaspoon of salt
freshly ground pepper
2 tablespoons of bread crumbs
1 tablespoon of grated Parmesan cheese
2 tablespoons of dry white wine
1/2 cup of butter, melted
1 lemon, quartered

Clean and split fish. Grease a 12" x 16", fairly shallow casserole. Place sliced onion on bottom of casserole, cover with mushrooms and place fish on top, skin side up. Sprinkle with salt, pepper, bread crumbs  and cheese, and pour wine and melted butter over. Bake in 400ºF.  oven for 18 minutes. Serve garnished with lemon quarters. Serves 6 - 8
