Barbecue Fish Fillets
3 pounds of fish fillets 3 tablespoons of lemon juice 1/2 cup of olive oil 1/2 teaspoon of oregano 3/4 teaspoon of basil 3/4 teaspoon of celery salt 1/2 teaspoon of salt Fish Barbecue Sauce
Buy either sole or flounder fillets. About 2 hours before you plan to barbecue fish, place fillets in shallow glass dish. Mix lemon juice, oil, herbs, and seasonings. Pour over fish. Cover dish and place in refrigerator. Let fish marinate about 2 hours. While fillets are in refrigerator, prepare barbecue sauce. Keep it warm until barbecue time, then set it one side of the grill to reheat. Drain fillets. Save marinade. Place fish in well oiled, hinged double broiling rack. Brush with marinade. Grill close to coals 2 or 3 minutes. Turn and grill other side. Turn frequently onto warmed plates, with Hot Fish Barbecue sauce. Makes 6 servings
Barbecued Salmon Steaks: You can broil salmon or other fish steaks by this recipe. Fish should be cooked quickly and just until tender. Have both fish and grill well oiled to prevent sticking. Brush fish steaks, or whole fish, with melted butter and lemon juice while cooking. Season with salt and pepper. Serve with or without barbecue sauce.
