| Grilled Chicken Ribbons
1/4 Olive oil 2 tablespoons of lemon or lime juice 3 cloves garlic; minced 1 teaspoon of honey 3/4 teaspoon of dried thyme; crushed 1 teaspoon of red pepper flakes Salt & pepper to taste 4 Chicken breast halves, boneless & skinless |

In a small bowl, combine all ingredients except chicken; mix well. Cut chicken lengthwise into strips about 1 inch wide. Thread chicken onto 8 skewers; brush generously with sauce mixture. Grill chicken over hot coals, covered, 3 to 4 minutes on each side or until chicken is cooked through, basting with sauce once or twice. Discard remaining sauce. Makes 4 servings.
