| Grilled Chicken-Jalapeno Burgers
1 Salsa; (see below) 3/4 pound of Ground Chicken 1/2 cup of Whole-wheat bread crumbs fresh 1 small Carrot; peeled, and grated 1 Green onion; minced 2 teaspoon of Jalapeno peppers, seeded, minced, pickled 1/2 teaspoon of salt 4 Kaiser rolls or whole-grain Buns, split Curly leaf lettuce, opt Whole pickled jalapenos, op SALSA 2 medium tomatoes, chopped 1 tablespoon of Jalapeno peppers, finely chopped, pickled or more to taste 1 Green onion, thinly sliced 1 Garlic clove, minced 1 tablespoon of parsley, fresh, chopped 1 teaspoon of Lime peel, grated 1 tablespoon of lime juice |

Prepare outdoor grill for cooking or preheat broiler. Prepare salsa; set aside. In large bowl, combine ground chicken, bread crumbs, carrot, green onion, minced jalapenos and salt. Shape mixture into four patties. Place patties on cooking surface over hot coals or on broiler pan. Grill or broil 5-6 minutes on each side, or until golden and cooked through. Toast buns, split side down, during last 5 minutes of cooking time. Serve burgers on toasted rolls with lettuce and salsa. Garnish with whole pickled jalapenos. Salsa: In medium-sized bowl, combine all ingredients until well mixed. Cover and let stand until serving time. Makes about 1 cup.
