| Cracked Pepper Steak
Select a 4 pound chuck steak 2 1/2 - 3 inches thick. Slash fat edges. Use meat tenderizer on steak according to label directions. Press cracked or coarsely ground pepper into both sides or meat, about 3 tablespoons.

Parboil grill about 3 inches from coals, 35- 50 minutes, turning frequently with tongs. To serve, slice diagonally across the grain, keep slices thin. Makes 6 - 8 servings.
