Herbed Grilled Catfish

1 1/3 teaspoons of paprika
1/2 teaspoon of garlic powder
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of dried thyme
1/2 teaspoon of dried oregano
1/8 teaspoon of ground red pepper
1 pound of catfish fillets
Vegetable cooking spray
Oregano
Thyme

 
Combine the first 7 ingredients. Sprinkle mixture evenly on both sides of fillets. Place fillets in a grilling basket coated with cooking spray. Coat grill rack with cooking spray; place on grill over medium-hot coals (350 to 400ºF.). Place basket on rack; grill, covered, 4 minutes on each side or until fish flakes easily when tested with a fork. Transfer to a serving platter. If desired, garnish with fresh oregano and thyme.
