| Mediterranean Swordfish Steaks
1/4 cup of olive oil 2 tablespoons of fresh lemon juice 1 teaspoon of dried oregano 1/2 teaspoon of grated lemon rind 1/2 teaspoon of crumbled dried rosemary 1/2 teaspoon of salt 1/2 teaspoon of freshly-ground black pepper 1 1/2 pounds swordfish steaks, about 1" thick |

Mix olive oil, lemon juice, oregano, lemon rind, rosemary, salt and pepper in a re-sealable plastic bag. Add swordfish steaks, toss to coat. Marinate at room temperature 30 minutes, turning occasionally.
Prepare a medium grill. Cook steaks about 5 minutes per side for medium doneness.
