Grilled Guinness Marinated Ribeye Steaks

Four 8 to 10 ounce ribeye steaks or any steak of your choice
1 1/2 cups of Guinness Stout
1 1/2 cups of beef broth or stock
4 tablespoons of extra virgin olive oil
2 sprigs of fresh thyme
2 sprigs of fresh oregano
1 teaspoon of Worcestershire sauce
1 each bay leaf
4 teaspoon of chopped fresh garlic
2 each sliced shallots or 1 cup of sliced red onion
1 teaspoon of coarse ground black pepper
1/2 cup of beef gravy or demi glaze
8 tablespoons of unsalted butter sliced in 8 pieces

In a deep dish combine the Guinness, beef broth, olive oil, herbs, Worcestershire sauce, bay leaf, garlic, shallots, salt and pepper.
Add the steaks, cover and refrigerate for at least 8 hours.
Prepare your gas or charcoal grill or heat your indoor grill pan.
remove steaks from marinade and pat dry, grill to desired doneness.
Meanwhile pour marinade into sauce pot, bring to a full boil, skimming off any foam that rises to the surface. Reduce sauce to medium heat.
Allow sauce to simmer until it reaches to about half of the original quantity.
Stir in gravy or demi glaze, remove from heat and strain.
Whisk in butter one piece at a time until all of the butter is incorporated into the sauce.
Serve sauce along with or over the steaks
