| Kettle Barbecued Pot Roast
Select a 6 - 9 pound beef pot roast, 3 - 4 inches thick. Rub with olive oil, salt and pepper. Place on grill top over coals and sear meat on both sides. Baste with a sauce of sour cream spiked with garlic powder and prepared horseradish to suit your taste. Cover barbecue kettle with lid ( or lower smoker hood). Cook slowly for about 15 minutes per pound for medium rare. Every 15 minutes of roasting time, turn meat and baste with sour cream sauce. |
