Picnic Cake
3/4 cup of butter 2 1/4 cups of sugar 3 Eggs 3 3/8 cups of flour 3 teaspoons of baking powder 3/4 teaspoon of salt 1 1/2 cups of milk 2 teaspoons of vanilla 12 Marshmallows TOPPING 3/4 cup of chopped walnuts 3/4 cup of packed brown sugar
(needs no refrigeration), Oven 350ºF. pan 9 x 13 buttered and floured, time 40-50 mins. Cream 3/4 cup butter and 2 1/4 cup sugar. Add 3 eggs, beating after each addition. Sift together 3 3/8 cup flour 3 tsp baking powder 3/4 tsp salt. Combine 1 1/2 cup milk, 2 tsp vanilla. Add the flour mixture alternately w/ the milk mixture to the butter/sugar/eggs, beating well after each addition. Pour into prepared pan. Cut 12 marshmallows in half, and place on top of batter. Sprinkle top of cake w/ mixture of : 3/4 cup chopped walnuts 3/4 cup packed brown sugar. Dust this mixture off of marshmallows to prevent burning. Bake as directed above.
