Giblet Gravy

giblets and  neck from turkey
1 onion
2 stalks celery and leaves
1 carrot cut in chunks
1 teaspoon of salt
1/8 teaspoon of freshly ground black pepper
3 cups of water
1/3 cup of turkey drippings
1/3 cup of all purpose flour
2 cups of giblet broth
salt
black pepper

In a medium saucepan, combine turkey giblets and neck, onion, celery, carrot, 1 teaspoon of salt, 1/8 teaspoon of pepper and water. Bring to boiling. Reduce heat and simmer covered about 1 hour, until giblets are fork tender. Drain giblets, discard vegetables and neck, reserve broth. Chop giblets fine.
Blend turkey drippings and flour smoothly. Gradually add reserved giblet broth. Heat to boiling, stirring. Season to taste with salt and pepper. Add chopped giblets. Makes 2 cups
