Skinny Beef Gravy

1 cup of defatted Beef Drippings
1 cup of beef stock
2 tablespoons of cornstarch or arrowroot
1/4 cup of water
salt to taste

Heat the defatted beef drippings and beef stock in a saucepan. Mix the water with cornstarch or arrowroot and add to the gravy. Cook over medium heat, stirring occasionally, until thickened. Add salt to taste. Beef stock can be stored in ice cube trays in the freezer and used for individual servings of this gravy. For serving, use 2 beef stock cubes, 1/4 teaspoon of cornstarch or arrowroot and 1 teaspoon of chopped onion, optional. Makes 1 to 1 1/2 cups
