| Lemon Yogurt Muffins
3/4 cup of sugar 1 1/2 cups of flour 5 cups of flour 5 teaspoons of soda 1 teaspoon of salt 4 eggs, beaten 1 cup of vegetable oil 1 quart of buttermilk
Combine the sugar, flour, baking soda and powder together. In separate bowl beat together yogurt, egg, melted margarine and lemon juice. Stir into dry mixture until just blended. Stir in nuts. Spoon into greased or paper lined muffin cups. Bake at 350ºF. for 25 minutes or until a toothpick inserted in the center comes out clean.
