| Pecan Muffins
1 1/2 cups of flour 1/2 cup of sugar 1/2 cup of chopped pecans 2 teaspoons of baking powder 1/2 teaspoon of salt 1 egg, slightly beaten 1/2 cup of milk 1/4 cup of vegetable oil 1 teaspoon of vanilla |

Combine the flour, sugar, chopped nuts, baking powder and salt in a large bowl. Beat egg slightly, blend in milk, oil and vanilla. Pour into a well in the center of the flour mixture. Stir mixture just until moistened. Fill greased muffin cups 2/3 full. Bake at 400ºF. for 20 - 25 minutes.
