| Almond Whipping Cream Cake
Cake: 1 cup of whipping cream 2 eggs 1 cup of sugar 1 teaspoon of vanilla 1 1/2 cups of sifted cake flour 2 teaspoons of baking powder 1/4 teaspoon of salt Frosting: 3 ounces of cream cheese, softened 1 cup of sifted powdered sugar 1/2 teaspoon of almond extract 1 cup of slivered almonds, toasted |

Cake: Beat whipping cream until peaks form. Add eggs and beat until smooth. Add sugar and continue beating until well mixed. Add vanilla. Combine the flour, baking powder and salt. Fold the dry ingredients into cream mixture. Pour into a greased and floured 8 inch square pan and bake at 375ºF. for 25 minutes or until pick inserted in center comes out clean. Cool. Frosting: Beat the cream cheese until light. Add the powered sugar and continue beating until smooth. Add almond flavoring. Stir in almonds and spread on cake.
