Banana Nut Layer Cake

Cake:
1 stick plus 1 tablespoon of margarine
1 1/2 cups of sugar
3 eggs
4 ripe bananas, mashed
1 tablespoon of baking soda
1/3 cup plus 1 tablespoon of buttermilk
2 teaspoons of vanilla
2 cups of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of nuts
Frosting:
1 stick of margarine
8 ounces of cream cheese
1 box 10x powdered sugar
1 teaspoon of vanilla
1 cup of chopped nuts



Cake: Cream margarine and sugar until smooth and creamy. Add eggs, one at a time, beating after each addition. In separate bowl, blend mashed bananas and baking soda, add buttermilk and vanilla,. Add this banana mixture to creamed mixture. Sift together flour, salt, and baking powder. Stir flour into batter until smooth and well blended. Add nuts. Pour into 2 greases 9 inch cake pans and bake at 350ºF. for 20 to 25 minutes.
Frosting: Cream margarine and cream cheese until light and fluffy. Beat in sugar and add vanilla. Frost tops and sides of layers. Sprinkle nuts on top of cake.
