Coconut Pound Cake












Coconut Pound Cake

3 sticks of butter or margarine
3 cups of sugar
6 eggs
1 1/2 teaspoons of vanilla or 1 coconut flavoring
1 1/2 teaspoons of almond
3 cups of flour
1/2 teaspoon of baking powder
1 cup of milk
one 7 ounce can of flaked coconut (2 cups)

Cream the margarine and sugar until light and fluffy. Add eggs one at a time. Beat well after each addition. Add flavorings. Sift together baking powder and flour. Add flour alternately with milk. Beginning and ending with flour. Fold in coconut. Pour into a greased and floured 10 inch tube pan and bake at 325ºF. for 1 hour and 15 minutes to 1 hour and 25 minutes.
