| Cream Cheese Pound Cake
3 sticks of margarine 8 ounces of cream cheese 3 cups of sugar a dash of salt 1 teaspoon of vanilla 1 teaspoon of lemon, optional 6 eggs 3 cups of sifted flour 1 1/2 cups of chopped pecans, optional
Cream margarine, cream cheese and sugar until light and fluffy. Add salt, vanilla and lemon flavoring. Beat well. Add eggs one at a time, beating well after each addition. Stir in flour. If nuts are desired add at this time. Pour into greased and floured tube pan or two loaf pans. Bake at 300ºF. for 1 hour, 20 minutes (about 1 hour for loaf pans) or until pick inserted in center comes out clean.
