Cake: 1 1/2 cups of Wesson oil 2 cups of sugar 3 eggs 3 cups of cake flour 1/2 teaspoon of salt 1 teaspoon of soda 2 teaspoons of vanilla 1 cup of chopped pecans 3 cups of finely chopped apples Frosting: 1 stick of margarine 1 1/2 cups of brown sugar 1 cup of white sugar 1/2 cup of powdered sugar 1/2 cup of evaporated milk 10 - 12 marshmallows
Cake: Combine the oil, sugar and eggs, mix well. Sift together flour, salt and baking soda. Add to mixture. Add vanilla and fold in nuts and apples. Grease and flour pan. Can be baked in a Bundt or tube pan at 350ºF. for 1 hour to 1 1/4 hours, a 13 x 9 x 2 inch pan at 350 for about 45 minutes or 3, 8 inch cake pans for 35 minutes or 2 loaf pans for about 45 minutes. Frosting: Mix all ingredients, except marshmallows in pan and boil for about 4 minutes. Add marshmallows and stir until melted. Beat until thick enough to spread.
