Cake 3 cups of flour 2 cups of sugar 1 teaspoon of soda 1 teaspoon of salt 1 teaspoon of cinnamon 3 eggs, beaten 1 cup of vegetable oil 1 1/2 teaspoons of vanilla 1 cup of chopped nuts one 8 ounce can of crushed pineapple, with juice 2 cups of chopped bananas Frosting: one 8 ounce package of cream cheese 1 stick of margarine or butter one 16 ounce box of powdered sugar 1 teaspoon of vanilla 1/2 cup of chopped nuts
Cake: Mix flour, sugar, soda, salt and cinnamon and set aside. Beat eggs and add vegetable oil. Stir egg mixture into dry ingredients. Stir until well mixed. Add vanilla, nuts, pineapple, with juice and bananas. Pour into 3 greased and floured 9 inch pans. Bake at 350ºF. for 25 - 30 minutes. Cool. Frosting: Set cream cheese and butter out to soften, combine and beat until smooth. Add powdered sugar and vanilla. Beat until light and fluffy. Frost cake and sprinkle chopped nuts on top.
