Mississippi Mud Cake












Mississippi Mud Cake

Cake:
2 cups of sugar
2 sticks of butter or margarine
 4eggs
1 1/2 cups of flour
1/3 cup of cocoa
1/8 teaspoon of salt
 1 1/2 cups of chopped pecans
1 teaspoon of vanilla
Miniature marshmallows to cover cake
Frosting:
1 stick of margarine, melted
1/3 cup of evaporated milk
1/3 cup of cocoa
1 pound box of powdered sugar
1 teaspoon of vanilla
1 cup of chopped nuts

Cream sugar and butter. Add eggs one at a time and beat well. Sift flour, cocoa and salt together and add to creamed mixture mixing well. Add vanilla and nuts. Pour into a greased and floured 13 x9 inch pan and bake at 300ºF. or 350 for 35 minutes. Return to oven until marshmallows have melted, about 10 minutes. Cool and frost.
Frosting: Combine margarine, milk and cocoa in saucepan. Cook on low heat until melted. Add sugar and mix until smooth. Add vanilla and nuts. Spread on cake.
