Pistachio Cake

Pistachio Cake

Cake: 1 box of white cake mix 2 layer size
3/4 cup of vegetable oil
3/4 cup of water
4 eggs
one 3 ounce box of Pistachio instant pudding
1/2 cup of chopped nuts
Glaze:
1/2 cup of hot water
1 tablespoon of butter, melted
2 cups of powdered suagr
1/2 teaspoon of vanilla


Cake: Combine the cake mix, oil, water, eggs and pudding mix. Beat about 4 minutes at medium speed. Pour into greased and floured 9 x 13 x 2 inch pan. Sprinkle top with nuts. Bake at 350ºF. for 35 - 40 minutes.
Glaze: Place water, butter, powdered sugar and vanilla in small bowl and beat with a fork. While cake is still ot punch holes with a fork over the entire top. Spoon icing over cake allowing it to run down into holes. Pry holes open if necessary to insure that the icing runs into cake. Is a pretty green, stays moist and is a real favorite at my home during the holidays or whenever.
