| Sponge Cake w/ Broiled Caramel Icing
Cake: 2 eggs, beaten 1 cup of sugar 1 cup of sifted flour 1 teaspoon of baking powder 1/2 cup of scalded milk 2 tablespoons of butter 1 teaspoon of vanilla Caramel Icing: 3 tablespoons of butter 3 tablespoons of cream 1/2 cup of dark brown sugar 1 cup of chopped pecans
Cake: Beat eggs, add sugar and continue beating until lemon colored. Add flour and baking powder that have been sifted together. Melt butter in milk and add. Add vanilla and pour into a greased and floured 8 x8 inch pan. Bake at 350ºF. for 30 - 35 minutes. Remove from oven. Icing: Remove from heat, pour on hot cake and add nuts. Return to oven and broil 1 - 3 minutes.
