5 eggs, separated
2 sticks of butter
1/2 cup of powdered sugar
1 tablespoon of unsweetened cocoa
1 tablespoon of instant coffee
1 teaspoon of water



Grease a 15 x 10 x 1 inch pan, cover bottom with wax paper and grease paper heavily. Separate eggs and beat whites until stiff. Beat egg yolks in large bowl at high speed. Gradually add sugar and beat until light and foamy. Add cocoa, flour, and vanilla beating at low speed. Fold in egg whites. Pour batter onto wax paper and spread evenly in pan. Bake at 350ºF. for 15 - 20 minutes. Bake until cake springs back when lightly pressed with fingers. Remove from oven, turn out onto towel that has been sprinkled with powdered sugar. Remove wax paper. Roll cake lengthwise with towel while cake is warm. Let stand for 5 minutes. Unroll and fill with thawed topping or whipped cream. Reroll, place seam down and dust with powdered sugar.
