Caramel Divinity Dream














Caramel Divinity Dream

2 1/2 cups of granulated sugar
1/2 cup of light corn syrup
1/2 cup of water
1/4 teaspoon of salt
2 egg whites
1 teaspoon of vanilla
Caramel:
3/4 cup of brown sugar
1 1/3 cups of granulated sugar
1 1/4 cups of evaporated milk, divided
1/8 teaspoon of baking soda

Combine the sugar, corn syrup, water and salt in a medium sauce pan. Cook, stirring constantly until sugar dissolves. Continue cooking until it reaches hard ball stage, 260º on candy thermometer. Meanwhile beat egg whites until stiff peaks form. Gradually pour  syrup over egg whites while beating at high speed. Add vanilla and beat until candy thickens and holds shape. Butter hands and shape into 3/4 inch balls. Let stand until firm.
Caramel: In a large heavy saucepan, stir together sugars, 1 cup of milk and soda. Cook and stir over medium heat until sugar is dissolved and mixture boils. Boil, stirring frequently until it reaches 230º  the soft ball stage. Remove from heat and cool without stirring to 100º . Beat until thickens and loses gloss. Beat in remaining 1/4 cup of evaporated milk. If caramel becomes too stiff stir in a little extra evaporated milk. To coat, dip ball, one at a time into caramel. Place on waxed paper to cool. Yield: 6 dozen
