Chocolate  Covered Cherries














Chocolate  Covered Cherries

48 maraschino cherries, with stems
3 tablespoons of margarine
3 tablespoons of light corn syrup
1/8 teaspoon of salt
2 cups of sifted powder sugar
1 tablespoon of margarine
one 12 ounce bag of semisweet chocolate morsels

Drain the cherries and roll on paper towels to dry, set aside. Stir together softened margarine, syrup and salt, mix well. add sugar and mix with hands until smooth. Mold about 1/2 teaspoon of sugar mixture around each cherry, leaving stems exposed. Place in refrigerator for 2 hours to chill. Melt chocolate and margarine in top of double broiler. Using stem to handle cherries, dip each in chocolate. Place on waxed paper. Chill until firm then place in airtight container in refrigerator.
