2 1/2  cups of sugar
1/2 cup of water
1/2 cup of light corn syrup
1/8 teaspoon of salt
2 egg whites
1 teaspoon of vanilla
1 cup of finely chopped nuts

Combine sugar, water and syrup in a large heavy saucepan. Bring to a boil, stirring only until sugar is dissolved. Continue boiling, without stirring until syrup reaches 240ºF. A few minutes before syrup is ready combine the egg whites and salt. Beat until stiff. Slowly pour in a thin stream 1/2 of the syrup into whites, while beating. Return remaining syrup to heat and boil until it reaches 260ºF. Add this slowly to mixture while beating. Continue to beat until it loses gloss. Add vanilla and fold in nuts. Drop by tablespoon on to waxed paper. Swirl to from peak. Decorate with halved candied cherries.
