3 cups of sugar 3/4 cup of light corn syrup 3/4 cup of water 1/4 teaspoon of salt 2 egg whites one 3 1/2 ounce package of cherry or lime flavored gelatin 1 teaspoon of vanilla 1 cup of chopped nuts 1/2 cup of flaked coconut
Butter sides of a heavy saucepan. Combine the sugar, corn syrup, water and salt in pan, mix well. Cook, stirring constantly until sugar dissolves and mixture comes to a boil. Cook without stirring to hard ball stage (250ºF.). remove from heat. Beat egg whites until soft peaks form. Gradually beat in dry gelatin until stiff peaks form. Pour hot syrup slowly over egg whites, while beating at high speed until soft peaks form, add vanilla. Stir in nuts and coconut. Drop by tablespoon onto waxed paper. Makes about 60 candies.
