| Old Fashioned Peanut Brittle
2 cups of sugar 1 cup of light corn syrup 1/2 cup of water 4 tablespoons of butter or margarine 2 cups of raw peanuts, chopped 1 teaspoon of baking soda
In a large heavy sauce pan heat together sugar, syrup and water. Stir until sugar dissolves. Boil on medium to medium high until syrup reaches approximately 250º, add nuts. Continue to boil and stir until it reaches 305º. Syrup will be yellow brown and peanuts will pop and brown slightly. remove from heat, add soda and butter, stir well. Pour onto 2 large greased aluminum foil strips. As candy begins to cool pull outer edges to stretch. When cooled, break into pieces.
