Opera Fudge













Opera Fudge

2 cups of sugar
1/8 teaspoon of salt
3/4 cup of cream
1/2 cup of milk
1 tablespoon of corn syrup
1 teaspoon of vanilla
3/4 cup of chopped nuts
one 6 ounce bag of semisweet chocolate morsels

Combine the sugar, salt, cream, milk and syrup in a heavy saucepan. Cook over medium low heat stirring until mixture boils. Boil until syrup reaches 236ºF. on candy thermometer. Pour into clean saucepan without scraping bottom of pan. Set aside to cool to lukewarm, do not stir. Add vanilla and nuts., beat with spoon u until candy begins to thicken and loses its gloss. Pour into buttered 8 x8x inch pan. Cool.  Melt chocolate in double boiler. Stir until melted. Pour over white fudge. Cook until firm. Cut into squares.
