| Butter Rum Cheese Bars
1 roll of refrigerator slice and bake butterscotch cookies 1 cup of sugar 16 ounces of cream cheese 2 eggs 2 teaspoons of rum flavoring
Slice cookie dough 1/4 inch thick and place on bottom of 2 greased 8 x8 inch pans. Bake at 375ºF. for 15 - 20 minutes or until lightly browned. (Will be puffy when removed from oven). Beat cream cheese and sugar until well mixed. Add eggs and flavoring. Beat until smooth. Pour cheese mixture over baked cookie layer. Bake at 375 for 20 - 25 minutes. Cool slightly, then refrigerate at least one hour. Cut into 20 bars per pan. Yield 40
