| Carrot Cookie
1 stick of butter, softened 1 cup of light brown sugar 1/2 cup of granulated sugar 1 teaspoon of vanilla 1 egg 1 cup of boiled and mashed carrots, cooled 2 cups of flour 1/2 teaspoon of salt 1 1/2 teaspoons of baking powder 1/2 cup of raisins
Cream butter and sugars until smooth. Add vanilla and egg. Beat well. Add carrots. Combine flour, salt, and baking powder. Sift together and add to creamed mixture. Beat until smooth. Add raisins. Drop by teaspoon on greased cookie sheet 3 inches apart. Bake at 375ºF. for 10 -12 minutes. Yield: 3 dozen
