| Glazed Carrot Cookie
2 sticks of margarine or butter 1 cup of sugar 2 eggs one 7 1/2 ounce jar of baby food carrots, junior style 1 teaspoon of vanilla 1 teaspoon of lemon 2 3/4 cups of flour 1 tablespoon of baking powder Glaze: 1/4 cup of orange juice 2 1/2 - 3 cups of powdered sugar
Melt butter and stir in sugar, eggs, carrots and flavoring. Mix until smooth. Combine flour and baking powder and gradually add to creamed mixture, stirring until smooth. Cover and chill for 1 hour. Drop by teaspoon on greased cookie sheet. Bake at 375ºF. for 10 - 12 minutes. For the glaze, combine the orange juice and powdered sugar, mix until smooth but thick. Spread on cookies while still warm. Yield 7 - 8 dozen.
