| Pecan Party Cookie
2 sticks of butter or margarine
1 cup of sugar
2 eggs separated
1 teaspoon of vanilla
2 cups of flour
1/4 teaspoon of salt
2 1/2 cups of finely chopped pecans
Cream butter and sugar. Add egg yolks and vanilla. Combine the flour and salt, add to creamed mixture. Chill dough in refrigerator for at least 1 hour. Pinch off dough and form into small ball. Dip each ball into slightly beaten egg whites and then roll in nuts. Place on ungreased baking sheet and press thumb into center. Bake at 350ºF. 15 - 18 minutes.
