| Sugarless Orange Cranberry Muffins
3 large eggs 1/2 cup of soft butter 1 cup of unsweetened orange juice 2 1/2 cups of flour 1 teaspoon of baking soda 2 teaspoons of baking powder 1 cup of chopped fresh cranberries
Beat eggs, butter and orange juice. Add flour, baking powder and baking soda. Beat well. Stir in chopped cranberries. Spoon into greased and floured muffin tin. Bake at 350ºF. for 20 minutes. Cool on wire racks.
