| Mint Jelly
1 cup of water 2 cups of fresh mint, leaves and stems 3 1/2 cups of sugar 1/2cup of vinegar 3 ounces of Certo Green food coloring
Combine the water, mint, sugar, and vinegar in heavy pan. Bring to a rolling boil. Add Certo, return to a boil for 3 - 3 1/2 minutes. Strain through several layers of cheese cloth. Add touch of green coloring. Pour into sterilized jars and seal or cover with paraffin. Bay food jars make clever gift size containers.
