| Coconut Cheese Pie
2 tablespoons of margarine 3 cups of flaked coconut 4 eggs 2/3 cup of sugar 8 ounces of cream cheese 3 tablespoons of lemon juice
Spread softened margarine on sides and bottom of a 9 inch pie pan. Press 1 1/2 cups of coconut on sides and bottom into margarine to form a coconut pie shell. Combine eggs, sugar cream cheese, lemon juice and 1 cup of coconut in blender. Blend until smooth and pour into coconut pie shell. Lay the remaining 1/2 cup of coconut around edge to from top of crust. Place in a 325ºF. oven and bake for 30 minutes. Watch; if coconut on top edge begins to brown cover with aluminum foil.
