| Coconut Pie
1/3 cup of flour 2/3 cup of sugar 1/4 teaspoon of salt 2 cups of milk 3 egg yolks 2 tablespoons of butter 1 teaspoon of vanilla 1 cup of fresh coconut or 6 ounces frozen 1 cup of whipped cream or Cool Whip one 9 inch baked pie shell
Combine the flour, sugar and salt in double boiler. Scald milk and add to mixture. Beat egg yolks slightly and add a small amount of milk mixture. Slowly add the rest of milk to eggs and return to double broiler. Cook covered for 2 minutes, cool and add butter, vanilla and coconut. Pour into shell and top with slightly sweetened whipped cream.
