Pumpkin Mincemeat Pie

Pumpkin Mincemeat Pie

1 unbaked pie crust
2 cups of mincemeat
3/4 cup of pumpkin
1/3 cup of firmly packed brown sugar
1 egg
2 teaspoons of pumpkin pie spice
one 5 1/2 ounce can of evaporated milk (2/3 cup)

Spread mincemeat in bottom of unbaked pie crust. Combine the pumpkin, sugar, egg and pie spice. Gradually add milk, mixing well. Pour over mincemeat. Bake in a preheated 375ºF. for 50 - 55 minutes. Test by inserting knife in center.
