| Thanksgiving Cake
1 box of spice cake mix
1 can of canned pumpkin
1/2 cup of vegetable oil
1 package of vanilla instant pudding mix
3 eggs
1 teaspoon of cinnamon
1/2 cup of water
1/2 cup of pecans, chopped
Put all but pecans in a mixing bowl. Mix at medium speed for 5 minutes. Add pecans last.
Thanksgiving Cake
2 cups of pumpkin
2 cups of sugar
4 eggs
1 teaspoon of salt
2 cups of flour
1 cup of vegetable oil
1 teaspoon of cinnamon
2 teaspoons of soda
Sift flour, salt, cinnamon and soda together. Set aside. Mix eggs and sugar, beating well. Add oil and beat well. Add dry ingredients and mix well. Blend in pumpkin. Bake in tube pan on 350ºF. for 1 hour.
ICING:
1 box powdered sugar
1 stick margarine
one 8 ounce package of cream cheese
1 teaspoon of vanilla or lemon extract
Cream margarine and cream cheese until smooth. Add sugar, flavoring. Beat until smooth. Spread on cool cake.
