| After The Holidays Salad
2 cups of diced cooked turkey 1 cup of pineapple chunks, well drained 1 cup of diced celery 1/2 cup of sliced greed onions 1/4 cup of dry roasted peanuts 1 cup of seedless green peppers 2/3 cup of mayonnaise 2 tablespoons of chopped chutney 1 tablespoon of lime juice 1/2 teaspoon of curry powder 1/4 teaspoon of salt Lettuce leaves, optional
In a mixing bowl, toss first six ingredients. In a small bowl, combine all remaining ingredients except lettuce. Pour over turkey and mix gently. Chill. Serve on a bed of lettuce, if desired. Yields: 4 servings.
I'm always looking for new ways to use up our leftover holiday turkey. The fruit, nuts and seasonings give the salad a unique flavor.
