| Easter Crown Salad
three 3 ounce packages of cream cheese 1/2 teaspoon of salt 2 cups of grated cucumber, drained 1 cup of mayonnaise 1/4 cup of minced onion 1/4 cup of minced parsley 1 clove garlic 1 tablespoon of unflavored gelatin 1/4 cup of cold water 1 head lettuce 2 hard cooked egg yolks, sieved |

Mix the first 6 ingredients in a bowl that has been rubbed with garlic. Soften gelatin in cold water and dissolve over hot water. Cool to lukewarm and combine with cheese mixture. Beat thoroughly and pack into a deep spring-form pan. Chill until mixture is firm. Remove from mold onto a bed of lettuce and sprinkle sieved egg yolks over top. Garnish with radish roses, if desired.
