| German Christmas Salad
3 cups of cold cooked potatoes, cubed 2 cups of diced apples 1/2 cup of finely chopped onion 1 cup of cold roast veal or pork roll 1/2 cup of cubed sour pickles 1 pickling herring fillet, cubed 1/4 cup of walnuts, coarsely chopped 3/4 cup of water 1 tablespoon of vinegar 1 teaspoon of salt 1 teaspoon of sugar 1/2 cup of mayonnaise 1 cup of sour cream 2 hard cooked eggs, sliced Chopped parsley
Combine the potatoes, apples, onion, veal, ham, pickles, herring and walnuts in a large bowl, toss lightly. Sprinkle with water, vinegar, salt and sugar; blend well. Stir together mayonnaise and sour cream; blend into potato mixture. Chill. Serve garnished with egg slices and chopped parsley. 6 servings |
