Holiday Fruit Salad














Holiday Fruit Salad

1 1/2 cup of pineapple juice
2 tablespoons of cornstarch
1/2 cup of sugar
Pinch of salt

Cook until thick. Add 2 beaten egg yolks and cook 1 minute longer and chill. Prepare 1 package of Dream Whip or Cool Whip and add to the mixture. Then add:
2 apples, peeled & cut up
1/2 cup of cherries, drained & chopped
2 cups of  marshmallows, cut up
2 cups of  bananas, cut up
1/2 cup of pecans, chopped

Chill before serving.

Holiday Fruit Salad

1 can (17 oz.) fruit cocktail
1 can (16 oz.) pineapple chunks
1 or 2 med. size apples
1 cup of  miniature marshmallows
1 cup of whipping cream
2 tablespoons of mayonnaise
1/2 cup of  chopped pecans (optional)

Cut pineapple chunks into small pieces. Cut apples into bite size pieces and soak in the pineapple juice.  Place all fruits in a strainer with marshmallows and drain 1 1/2 hours.

Whip the cream and add the mayonnaise. Fold in fruit mixture and nuts. Garnish with additional nuts, if desired. Chill about 2 hours. Salad can be prepared the day before serving.
